Because it behaves differently than wheat, it needs hydration, extra structure, and a little patience.</p><p><strong>If swapping for regular AP flour:</strong></p><ul><li><p><strong>Omit</strong><span> the xanthan gum.</span></p></li><li><p><strong>Reduce</strong><span> the yogurt slightly (start with 10g less).</span></p></li></ul><div><hr></div><p><strong>THE INGREDIENTS</strong></p><p><strong>Dry Ingredients</strong></p><ul><li><p>240 g gluten-free AP flour blend</p></li><li><p>1 &#188; tsp baking powder</p></li><li><p>&#189; tsp baking soda</p></li><li><p><span>&#189; tsp xanthan gum </span><em>(see notes)</em></p></li><li><p>&#188; tsp fine sea salt</p></li></ul><div><hr></div><p><strong>Wet Ingredients</strong></p><ul><li><p>150 g sugar (I know this is dry - stay with me)</p></li><li><p>60 g butter (melted and cooled)</p></li><li><p>25 g neutral oil (I prefer good quality canola, or light olive oil)</p></li><li><p>2 large eggs</p></li><li><p>1 tsp vanilla bean paste (or extract)</p></li><li><p>75 g whole milk yogurt</p></li></ul><div><hr></div><p><strong>Inclusions</strong></p><p>200 g fresh blueberries, washed and dried very well<br>1 tbsp GF flour, taken from the measured 240 g, for tossing berries</p><p><strong>Special Touch</strong></p><p>Vanilla sugar (regular sugar is fine) for dusting muffin top pans.</p><div><hr></div><p><strong>THE TOPPERS</strong></p><p><strong>Old-Fashion Oat Crumble</strong></p><ul><li><p>50 g butter (melted and cooled)</p></li><li><p>60 g gluten-free flour blend</p></li><li><p>50 g old-fashion rolled oats</p></li><li><p>45 g castor sugar</p></li><li><p>20 g light brown sugar</p></li><li><p>&#189; tsp cinnamon</p></li><li><p>pinch of salt</p></li></ul><div><hr></div><p><strong>THE STEPS</strong></p><ol><li><p><strong>Prep:</strong><span> Preheat oven to 425&#176;. Spray or oil your muffin pans, including tops and cups&#8212;we want a crispy undercarriage, and sprinkle with vanilla sugar (or regular).</span></p></li><li><p><strong>Make the Crumble:</strong> In a small bowl, mix the GF flour, oats, castor and brown sugar, cinnamon and salt. Add the melted butter and mix with a fork until clumpy. Place in the refrigerator while you make the batter.</p></li><li><p><strong>Melt the butter: </strong><span>Slowly melt the butter for the muffins and let it cool&#8212;if it&#8217;s screaming hot, it&#8217;ll scramble your egg. Pop it in the refrigerator for a few minutes if it&#8217;s too hot, but not long or you&#8217;re starting over. Set aside.</span></p></li><li><p><strong>Prep the blueberries:</strong> <span>Toss the clean, very dry blueberries with 1 tablespoon of flour taken from the measured flour. Save a few for the tops. Set aside.</span></p></li><li><p><strong>Mix Dry:</strong><span> Whisk your flour, xanthan gum, baking powder, baking soda, and salt in a medium bowl. </span></p></li><li><p><strong>Mix Wet:</strong><span> Beat the eggs and sugar until pale and fluffy. Slowly drizzle in the butter and oil. Add the vanilla, yogurt and milk, then mix in until just combined.</span></p></li><li><p><strong>Combine:</strong><span> Gently fold the dry ingredients into the wet until you see no more dry. Do not over mix. It&#8217;s completely fine for there to be a few lumps.</span></p></li><li><p><strong>Fold in Blueberries: </strong>Gently fold the berries into the final mixture, just enough to coat them.</p></li><li><p><strong>Give It a Rest:</strong><span> Let the batter sit for </span><strong><span>at least </span>15 minutes</strong>&#8212;or roughly long enough to clean up the mess you just made.<span> This gives the gluten-free flour time to hydrate, helps smooth out any grittiness and gives you that lift.</span></p></li></ol><div><hr></div><p style="text-align: center;"><em><strong>Grab a drink. A cup. A moment. Whatever.</strong></em></p><div><hr></div><ol start="10"><li><p><strong>Scoop:</strong> Use your ice cream scoop to fill each cavity right to the brim. Ignore the timid advice telling you to stop at half or three-quarters full. We&#8217;re making big, beautiful bakery-style muffins here. Press a few reserved blueberries into the tops.</p></li><li><p><strong>Top &amp; Bake: <span>Top &amp; Bake:</span></strong><span> Top generously with the oat crumble and a few extra oats. Bake for 6 minutes at 425&#176;F. Reduce the heat to 350&#176;F and bake 12&#8211;18 minutes for jumbo, or 10&#8211;13 minutes for regular muffins, checking at the earliest time. They&#8217;re done when the edges are dark gold and a toothpick inserted into the muffin comes out with a few moist crumbs attached. For precision, use an instant read thermometer and place in the center, making sure not to touch the bottom of the pan. We aim for an internal temperature of about 202&#176;F. </span></p></li><li><p><strong>Pull &amp; Cool:</strong> Let the muffins rest in the pan for 7&#8211;10 minutes, then run a knife around the edges and pop those babies onto a cooling rack. Give them another 15 minutes to set before diving in.</p></li></ol><div><hr></div><p><strong>TIPS FROM THE KITCHEN:</strong></p><p>I bake. I&#8217;m not a &#8220;baker&#8221;, so use your best judgment. I am sharing what I know works from my experience. These are muffins; they are hard to mess up, and nothing we do here will knock the world off its axis. Remember, baking should be fun!</p><p><em><strong>The Pans</strong><span>: Mini muffins are the point here: more powdered sugar, more jam, more opportunities to pretend you&#8217;ll eat only one. A standard muffin pan works too.</span></em></p><p><em><strong>Gluten-Free:</strong><span> Give the batter 15 minutes to rest. That is enough time to hydrate the flour, clean up your mess, and give you that lift.</span></em></p><p><em><strong>Xanthan Gum: </strong><span>Even if your GF flour blend already includes it, add an extra &#188; teaspoon. Commercial blends are often stingy with the binders, and this small boost provides the structure needed for a proper rise.</span></em></p><p><em><strong>Structure:</strong><span> Fill the cavities just past the brim. You want that slight spillover to catch the heat of the pan, creating a wide, golden-crisp edge that snaps when you bite it.</span></em></p><p><em><strong>Berries:</strong> Fresh blueberries hold their shape best and release less water than frozen. Dry them very well, toss them with a little flour taken from the recipe, and fold gently. Two hundred grams makes these properly packed without asking the muffin to become a fruit salad.</em></p><p><em><strong>Crumble:</strong> The oats give this topping a little more structure and crunch. Mix until it clumps when squeezed but still breaks apart easily. Refrigerating it while the batter rests helps it stay craggy instead of melting into the batter. Give it a slight press into the batter so it doesn&#8217;t fall off like an old oat roof. </em></p><p><em><strong>Ovens:</strong><span> Ovens lie; yours is likely no exception. Start checking for doneness at the 14-minute mark to avoid a tragedy.</span></em></p><p><em><strong>Make-Ahead:</strong><span> You can chill the batter overnight to improve the texture, but the muffins themselves are best eaten the day they&#8217;re baked. They won&#8217;t last that long anyway.</span></em></p><p><em><strong>Storage:</strong><span> Store in a closed container in the fridge for 3-4 days.</span></em></p><p><em><strong>Freezer-Friendly:</strong><span> These freeze beautifully if you leave them unglazed. Wrap them individually, thaw at room temp when the craving hits, and proceed with your life.</span></em></p><p><em><strong>Warming:</strong> These are best brought back to life with a little heat. Air-fry at <strong>300&#176;F for 3&#8211;4 minutes</strong> for crisp edges, or microwave for <strong>10&#8211;15 seconds</strong> for a softer muffin. Either way, warm, not molten. And, if you want my best advice: top with a little butter&#8212;you only live once!</em></p><div><hr></div><p><strong>SUBSTITUTIONS</strong></p><p>There are substitutions for almost everything. I&#8217;ve had great luck with dairy-free options, but the possibilities are endless&#8212;milk alternatives alone could take up a whole post. No one will judge you. </p></li></ul><div><hr></div><p><strong>THE STEPS</strong></p><ol><li><p><strong>Prep:</strong><span> Preheat oven to 425&#176;. Spray or oil your muffin pans, including tops and cups&#8212;we want a crispy undercarriage, and sprinkle with vanilla sugar (or regular).</span></p></li><li><p>Make the Crumble: In a small bowl, mix the GF flour, oats, ground peanuts, chopped peanuts, brown sugar, and salt. Add the melted butter and mix with a fork until clumpy. Place in the refrigerator while you make the batter.</p></li><li><p><strong>Melt the butter: </strong><span>Slowly melt the butter for the muffins and let it cool&#8212;if it&#8217;s screaming hot, it&#8217;ll scramble your egg. Set aside.</span></p></li><li><p><strong>Mix Dry:</strong><span> Whisk your flour, xanthan gum, baking powder, baking soda, and salt in a medium bowl.</span></p></li><li><p><strong>Warm the peanut butter </strong>gently until loose and stirrable, then let it cool slightly before adding. It should be fluid, not hot. *Important bit: don&#8217;t melt it until it&#8217;s oily and separated. Just loosen it. About 10&#8211;15 seconds in the microwave at a time, stir, 10 second increments until it thins out. Set aside.</p></li><li><p><strong>Mix Wet:</strong><span> Beat the eggs and sugar until pale and fluffy. Slowly drizzle in the oil, then add the peanut butter and mix until smooth. Add the vanilla, yogurt and milk, then mix in until just combined. This mix will be a bit more pasty and sticky due to our peanut butter, so don&#8217;t worry if it looks different than our usual fluff.</span></p></li><li><p><strong>Combine:</strong><span> Gently fold the dry ingredients into the wet, folding carefully.</span></p></li><li><p><strong>Ready the Jelly:</strong> Measure out your jelly and give it a good stir. Set aside</p></li><li><p><strong>Give It a Rest:</strong><span> Cover and let the batter sit for </span><strong>15 minutes&#8212;or roughly long enough to clean up the mess you just made.</strong><span> This gives the gluten-free flour time to hydrate, helps smooth out any grittiness and gives you that lift.</span></p></li></ol><div><hr></div><p style="text-align: center;"><em><strong>Grab a drink. A cup. A moment. Whatever.</strong></em></p><div><hr></div><ol start="10"><li><p><strong>Scoop &amp; Layer:</strong> Fill each cavity about halfway with batter. Spoon in 1&#189; tablespoons jelly for jumbo muffins or 2 teaspoons for regular, keeping it away from the edges as much as possible. Cover with the remaining batter equally until the jelly disappears beneath the surface. </p></li><li><p><strong>Top &amp; Bake: </strong>Top generously with the peanut butter crumble (i like to give it a very light press so it adhere&#8217;s to the batter). You can add a few extra peanuts, if your little heart desires. Bake for 7 minutes at 425&#176;F. Reduce the heat to 375&#176;F and bake 14&#8211;18 minutes for jumbo, or 10&#8211;13 minutes for regular muffins, checking at the earliest time. They&#8217;re done when the edges are dark gold and a toothpick inserted into the muffin comes out with a few moist crumbs attached. For precision, aim for an internal temperature of about 207&#176;F. Check near the outer edge of the muffin. Do not poke the jelly. It doesn&#8217;t like it and has no valuable information to give you.</p></li></ol><div><hr></div><p><strong>TIPS FROM THE KITCHEN:</strong></p><p>I bake. I&#8217;m not a &#8220;baker&#8221;, so use your best judgment. I am sharing what I know works from my experience. These are muffins; they are hard to mess up, and nothing we do here will knock the world off its axis. Remember, baking should be fun!</p><p><em><strong>The Pans</strong><span>: Mini muffins are the point here: more powdered sugar, more jam, more opportunities to pretend you&#8217;ll eat only one. A standard muffin pan works too.</span></em></p><p><em><strong>Gluten-Free:</strong><span> Give the batter 15 minutes to rest. That is enough time to hydrate the flour, clean up your mess, and give you that lift.</span></em></p><p><em><strong>Xanthan Gum: </strong><span>Even if your GF flour blend already includes it, add an extra &#188; teaspoon. Commercial blends are often stingy with the binders, and this small boost provides the structure needed for a proper rise.</span></em></p><p><em><strong>Structure:</strong><span> Fill the cavities just past the brim. You want that slight spillover to catch the heat of the pan, creating a wide, golden-crisp edge that snaps when you bite it.</span></em></p><p><em><strong>Peanut Butter: </strong>Use a smooth, conventional creamy peanut butter here&#8212;not the natural kind with an oil slick floating on top. Whisking it with the oil first helps it blend evenly into the batter and gives us a smoother, moister crumb. We want childhood lunchbox, not artisanal resistance.</em></p><p><em><strong>Jelly: </strong>Use a thick jelly or preserve and keep it away from the sides unless you enjoy scraping grape lava from a muffin pan. Make sure it is completely covered by batter before adding crumble.</em></p><p><em><strong>Crumble:</strong> The oats give it better crunch and staying power; ground peanuts bring the flavor, and chopped peanuts bring the obvious evidence. Chill it while the batter rests.</em></p><p><em><strong>Ovens:</strong><span> Ovens lie; yours is likely no exception. Start checking for doneness at the 14-minute mark to avoid a tragedy.</span></em></p><p><em><strong>Make-Ahead:</strong><span> You can chill the batter overnight to improve the texture, but the muffins themselves are best eaten the day they&#8217;re baked. They won&#8217;t last that long anyway.</span></em></p><p><em><strong>Storage:</strong><span> Store in a closed container in the fridge for 3-4 days.</span></em></p><p><em><strong>Freezer-Friendly:</strong><span> These freeze beautifully if you leave them unglazed. It will.</p></li></ul><div><hr></div><p><strong>THE STEPS</strong></p><ol><li><p><strong>Prep:</strong><span> Preheat oven to 425&#176;. Spray or oil your muffin pans, including tops and cups&#8212;we want a crispy undercarriage, and sprinkle with vanilla sugar (or regular).</span></p></li><li><p><strong>Ready the Jam:</strong> Spoon the jam into a piping bag fitted with a filling tip. No piping bag or filling tip? A small plastic bag and a little snip of the corner will do.</p></li><li><p><strong>Melt the butter: </strong><span>Slowly melt the butter for the muffins and let it cool&#8212;if it&#8217;s screaming hot, it&#8217;ll scramble your egg. Set aside.</span></p></li><li><p><strong>Mix Dry:</strong><span> Whisk your flour, xanthan gum, baking powder, baking soda, salt and nutmeg, and optional milk powder in a medium bowl. </span></p></li><li><p><strong>Mix Wet:</strong><span> Beat the eggs and sugar for 2&#8211;3 minutes until pale, thick, and fluffy. Slowly drizzle in the melted butter and oil while mixing. Add the vanilla to the yogurt and milk, pour into the bowl, and mix until just combined.</span></p></li><li><p><strong>Combine:</strong><span> Gently fold the dry ingredients into the wet, folding carefully&#8212;we don&#8217;t want to knock out our hard-earned aeration.</span></p></li><li><p><strong>Give It a Rest:</strong><span> Cover and let the batter sit for </span><strong>15 minutes&#8212;or roughly long enough to clean up the mess you just made.</strong><span> This gives the gluten-free flour time to hydrate, helps smooth out any grittiness and gives you that lift.</span></p></li></ol><div><hr></div><p style="text-align: center;"><em><strong>Grab a drink. A cup. A moment. Whatever.</strong></em></p><div><hr></div><ol start="9"><li><p><strong>Scoop:</strong> Fill the mini muffin cavities nearly full. For regular muffins, fill just past the brim&#8212;we want the slight spillover and the crispy edge.</p></li><li><p><strong>Bake, Powder &amp; Fill:</strong> Bake minis for 5 minutes at 425&#176;, then reduce the heat to 375&#176; and bake for another 5&#8211;8 minutes. For regular muffins, bake 7 minutes at 425&#176;, then 10&#8211;15 minutes at 375&#176;. Let them cool in the pan for 3&#8211;5 minutes, then tumble them&#8212;still warm&#8212;in powdered sugar. Pipe the jam into the bottom or side of each muffin until you feel a little resistance. Stop squeezing before pulling out the tip unless you want a tiny raspberry crime scene. Once cool, give them a second tumble in powdered sugar.</p></li></ol><div><hr></div><p><strong>TIPS FROM THE KITCHEN:</strong></p><p>I bake. I&#8217;m not a &#8220;baker&#8221;, so use your best judgment. I am sharing what I know works from my experience. These are muffins; they are hard to mess up, and nothing we do here will knock the world off its axis. Remember, baking should be fun!</p><p><em><strong>The Pans</strong><span>: </span>Mini muffins are the point here: more powdered sugar, more jam, more opportunities to pretend you&#8217;ll eat only one. A standard muffin pan works too.</em></p><p><em><strong>Gluten-Free:</strong><span> Give the batter 15 minutes to rest. That is enough time to hydrate the flour, clean up your mess, and give you that lift.</span></em></p><p><em><strong>Xanthan Gum: </strong><span>Even if your GF flour blend already includes it, add an extra &#188; teaspoon. If you prefer the cubed method, I won&#8217;t stop you.</em></p><p><em><strong>Structure:</strong> Fill the cavities just past the brim. You want that slight spillover to catch the heat of the pan, creating a wide, golden-crisp edge that snaps when you bite it.</em></p><p><em><strong>The Oven:</strong> Ovens lie; yours is likely no exception. Start checking for doneness at the 14-minute mark to avoid a tragedy.</em></p><p><em><strong>Make-Ahead:</strong> You can chill the batter overnight to improve the texture, but the muffins themselves are best eaten the day they&#8217;re baked. They won&#8217;t last that long anyway.</em></p><p><em><strong>Storage:</strong> Store in a closed container in the fridge for 3-4 days. While better tolerated by many, it still contains gluten and is not suitable for celiac disease. This initial high heat is important to pop our muffin top.</p></li><li><p>Spray your muffin top pan (I use ghee spray), sprinkle lightly with vanilla sugar.</p></li></ul><div><hr></div><p><strong>THE WHISK:</strong></p><ul><li><p>In a medium bowl, combine einkorn flour, cocoa powder, milk powder, baking powder, baking soda, and salt. Set aside.</p></li></ul><div><hr></div><p><strong>THE WHIP:</strong></p><ul><li><p>In your large bowl, beat the eggs and sugar for 2&#8211;3 minutes until pale, fluffy, and thickened.</p></li><li><p>Gently pour in the melted butter and olive oil.</p></li><li><p>Add the yogurt and vanilla. Whip gently until just combined.</p></li></ul><div><hr></div><p><strong>THE MIX:</strong></p><ul><li><p>Fold the dry ingredients into the wet in two additions. Do not overmix. Einkorn will punish you. A few lumps are not only acceptable &#8212; they are correct.</p></li></ul><blockquote><p>Adjust if needed:<br>Too stiff &#8594; add 1&#8211;2 tsp milk<br>Too thin &#8594; add 1 Tbsp flour<br>Goal: scoopable, not pourable</p></blockquote><div><hr></div><p><strong>THE CHILL:</strong></p><ul><li><p>Cover the batter and rest it in the refrigerator for 30 minutes. This lets the einkorn hydrate and gives the batter structure. Yes, this is important!</p></li></ul><div><hr></div><blockquote><p><em><strong>Grab a drink. A cup. A quickie. Whatever works.</strong></em></p></blockquote><div><hr></div><p><strong>THE SCOOP + FILL:</strong></p><ul><li><p>Using your medium scoop, fill each muffin top cavity about &#190; full.</p></li><li><p>Add a small, centered dollop of the chilled cream. Keep it modest&#8212;we are not making lava cakes.</p></li><li><p>Top with a small amount of additional batter to just cover the cream.</p></li><li><p>The height is the point&#8212;it gives your humps their oomph.</p></li><li><p>Fill every other cup if your pan allows. Not essential, but it helps them spread properly and bake evenly.</p></li></ul><div><hr></div><p><strong>THE BAKE:</strong></p><ul><li><p>6 minutes at 425&#176;F &#8212; for the rise</p></li><li><p>Reduce to 375&#176;F, bake 10&#8211;12 more minutes &#8212; until set and edges are slightly crisp (mine are baked at 10 minutes). </p></li><li><p>Test with a toothpick&#8212;-in this case, check slightly left of center&#8212;you&#8217;re checking the muffin, not the creamy center. It should come out mostly clean (a little chocolate is fine &#8212; we&#8217;re not baking drywall).</p></li><li><p>Cool in the pan for 15&#8211;20 minutes. Lift slowly&#8212;if the creamy center is sticking to the pan, it needs more time. <em>Be patient. </em>Once cool and set,<em> </em>transfer to cooling  rack.</p></li></ul><div><hr></div><p><strong>THE GLAZE</strong></p><ul><li><p>In your pour-spout cup, whisk together powdered sugar, cocoa, milk, melted butter, vanilla, and salt until smooth and glossy.</p></li><li><p>You&#8217;re looking for a pourable glaze with some body &#8212; not too thick, not too thin.</p></li><li><p>Once muffin tops are fully cooled, spoon or drizzle glaze over the top for a smooth, shiny finish.</p></li></ul><div><hr></div><p><strong>THE SWIRL</strong></p><ul><li><p>Grab your piping bag (or zip bag with corner snipped) from the refrigerator. </p></li><li><p>Pipe a loose swirl across the top. And for God&#8217;s sake, have fun with it! </p></li></ul><div><hr></div><p><strong>TIPS FROM THE KITCHEN:</strong></p><blockquote><p><em><strong>I bake. I am not a baker. Use your best judgment. </p><p>But it will make your kitchen smell like you have your life together&#8212;and sometimes that&#8217;s enough.</p><div><hr></div><p><strong>Prep time:</strong> 1 hour</p><p><strong>Cook time:</strong> 16 minutes</p><p><strong>Total time:</strong> 1 hour 16 minutes</p><p><strong>Yield:</strong> 6 jumbo muffin tops &#8212;or 12 &#8216;average&#8217; muffins.</p><p><strong>Difficulty:</strong> Relaxed. You&#8217;ve got this.</p><p><strong>THE GEAR</strong></p><blockquote><p>Mixing bowls: one small, one medium, one large</p><p>Cup with a pour spout (for the glaze)</p><p>Electric hand mixer or a good whisk and some conviction</p><p>Muffin top pan &#8212; We&#8217;re here for the humps, not the stumps. I use an actual muffin top pan (yes, they make them), but a regular muffin pan works too&#8212;no judgment. </p><p>Jumbo scoop (&#189; cup )</p><p>Cooling rack</p><p>Zester or microplane</p><p>Kitchen scale (recommended &#8212; baking likes precision). If you don&#8217;t have one, you can convert<a href="https://www.thecalculatorsite.com/cooking/cooking-calculator.php"> here.</a></p></blockquote><p><strong>THE INGREDIENTS</strong></p><p><strong>A Note on Flour</strong></p><p>For my baking, I choose einkorn&#8212;a nutty, buttery ancient grain that is significantly easier for my gluten sensitivity to digest. While better tolerated by many, it still contains gluten and is not suitable for celiac disease.</p><p>If swapping for all-purpose or a 1:1 gluten-free flour, you may need to adjust the liquid slightly (a splash of milk will do); you want it thick, but not biscuit-thick.</p><p>If using einkorn, be patient&#8212;it behaves a little differently. The batter may feel looser at first, but as it rests, it thickens and becomes noticeably fluffier.</p><div><hr></div><p><strong>DRY INGREDIENTS</strong></p><ul><li><p>216 g einkorn all-purpose flour (if using regular AP flour, see notes)</p></li><li><p>1 &#189; tsp baking powder</p></li><li><p>&#188; tsp baking soda</p></li><li><p>&#189; tsp fine sea salt</p></li><li><p>1 Tbsp fresh lemon zest</p></li></ul><p><strong>Lavender Lemon Sugar</strong></p><ul><li><p>150 g organic cane sugar</p></li><li><p>&#188; tsp culinary lavender (crushed or pulsed)</p></li><li><p>1 Tbsp fresh lemon zest</p></li></ul><p><strong>WET INGREDIENTS</strong></p><ul><li><p>80 g unsalted butter (melted and cooled)</p></li><li><p>50 g light olive oil</p></li><li><p>2 large eggs</p></li><li><p>2 tsp vanilla bean paste</p></li><li><p>120 g whole milk yogurt</p></li><li><p>1 Tbsp fresh lemon juice</p></li></ul><p><strong>Lemon Honey Glaze</strong></p><ul><li><p>120 g powdered sugar (sifted)</p></li><li><p>1 tbsp fresh lemon juice</p></li><li><p>1 tbsp honey</p></li></ul><p>Vanilla sugar or turbinado (if you want a little extra crunch) for the dusting the cups.</p><div><hr></div><p><strong>INSTRUCTIONS</strong></p><div><hr></div><p><strong>THE PREP:</strong></p><ul><li><p>Preheat oven to 425&#176;F for at least 30 minutes. This initial high heat is important to pop our muffin.</p></li><li><p>Spray your muffin top pan (l use ghee spray), sprinkle with a little sugar (I use vanilla sugar) for crispy bottoms&#8212;worth it!</p></li></ul><p><strong>THE INFUSION:</strong></p><ul><li><p>In a small bowl, rub the sugar, lavender, and lemon zest together until fragrant. Taste and adjust-we&#8217;re not making potpourri. Set aside.</p></li></ul><p><strong>THE WHISK:</strong></p><ul><li><p>In a medium bowl, combine einkorn flour, baking powder, baking soda, and salt. Set aside.</p></li></ul><p><strong>THE WHIP:</strong></p><ul><li><p>In a large bowl, beat the eggs with the lavender lemon sugar for <strong>2&#8211;3 minutes</strong> until pale, fluffy, and thickened.</p></li><li><p>Gently pour in the melted butter and olive oil.</p></li><li><p>Add the yogurt, lemon juice, and vanilla bean paste. Whip gently until sjust combined.</p></li></ul><p><strong>THE MIX:</strong></p><ul><li><p>Fold the dry ingredients into the wet in two additions. <strong>Do not overmix.</strong> Einkorn will punish you. A few lumps are not only acceptable &#8212; they are correct.</p></li></ul><blockquote><p>Adjust if needed:</p><p>Too stiff &#8594; add 1&#8211;2 tsp of milk</p><p>Too thin &#8594; add 1 Tbsp of flour</p><p>Goal: scoopable, not pourable</p></blockquote><p><strong>THE CHILL:</strong></p><ul><li><p>Cover the batter and rest it in the refrigerator for <strong>30 minutes.</strong> This lets the einkorn hydrate and gives the batter structure.</p></li></ul><div><hr></div><p><em><strong>Grab a drink A cup. A quickie. Whatever.</strong></em></p><div><hr></div><p><strong>THE SCOOP:</strong></p><ul><li><p>Using your jumbo scoop, mound the batter high into your muffin top pan. The height is the point &#8212; it gives your humps their oomph.</p></li><li><p>Fill every other cup if your pan allows. Not essential, but it helps them spread properly and bake evenly.</p></li></ul><p><strong>THE BAKE:</strong></p><ul><li><p><strong>6 minutes at 425&#176;F</strong> &#8212; for the rise</p></li><li><p><strong>Reduce to 375&#176;F, bake 10 more minutes</strong> &#8212; until centers are set and edges are golden and crisp.</p></li><li><p>Test with a toothpick or knife, the way your grandmother taught you. It should come out clean.</p></li><li><p>Cool in the pan for <strong>15 minutes.</strong> If they feel stuck, back away from the muffin top. They will release. Trust.</p></li></ul><p><strong>THE GLAZE</strong></p><ul><li><p>In your pour-spout cup, whisk together the sifted powdered sugar, lemon juice, and honey until smooth and pourable &#8212; thick enough to coat but thin enough to drizzle with some drama.</p></li><li><p style="text-align: justify;"><strong>Make sure your muffin tops are fully cooled</strong> before glazing. Warm muffins will eat that glaze for breakfast and leave you with nothing to show for it.</p></li><li><p style="text-align: justify;">Glaze in whatever artistic fashion strikes your fancy. Let sit for a few minutes before eating &#8212; or don&#8217;t. Living your life.</p></li></ul><div><hr></div><p><strong>NOTES FROM THE KITCHEN</strong></p><p><em><strong>I bake. I am not a baker. Use your best judgment. These are muffin tops. They are hard to mess up. Nothing we do here will knock the world off its axis.</strong></em></p><p><strong>Einkorn tip:</strong> It absorbs liquid more slowly than AP flour. If your batter looks tight after mixing, give it a moment before adding more liquid.</p><p><strong>Lavender tip:</strong> A little goes a long way. &#188; tsp sounds like nothing &#8212; it isn&#8217;t. Taste your sugar before committing.</p><p><strong>Butter temp tip:</strong> Melted butter should be cooled, not hot, when it hits your eggs. Hot butter scrambles. Cool butter cooperates.</p><p><strong>Oven tip:</strong> Every oven lies. Know yours. Check at the 14-minute mark.</p><p><strong>Make-ahead tip:</strong> Batter can be made the night before and chilled overnight. In fact, it improves. The muffin tops, however, are best eaten the day they&#8217;re baked. (They won&#8217;t last anyway.)</p><p><strong>Storage:</strong> Store unglazed muffin tops loosely covered at room temperature for up to 2 days. Glaze right before serving for best results.</p><p><strong>Freezer-friendly:</strong> Unglazed muffin tops freeze beautifully. Wrap individually, freeze up to 1 month. Thaw at room temp, glaze, proceed with your life.</p><p><strong>SUBSTITUTIONS</strong></p><p>There are substitutions for almost everything.
